We use the best “kurobuta” (Black pig) pork from Kagoshima City that the owner finds at the market with the richest flavor. Our shabu-shabu (Japanese hot pot dish where you cook thin slices of meat and vegetables by swishing it in hot water or broth and then dip in sauce) is made with our handmade hongaeshi soba tsuyu (which is a dipping sauce for “soba” (Japanese buckwheat noodles) made of mirin (sweet rice wine used for cooking), soy sauce, dashi (soup stock), and sugar) filled with plenty of green onions and yuzukosho (zest of a Japanese citrus called “yuzu” with spicy chili paste) create a light yet deep flavor. Please enjoy this exquisite combination that will surely have you coming back for more.
In addition to the excellent thick-sliced black pork steaks, which we roast for an extended time on an open flame, we serve a wide selection of dishes prepared with carefully selected fish and vegetables.
