The key ingredient that makes Sarashina’s okonomiyaki so special is the umami of tororo kombu (soft flakes of sea kelp) that brings together the batter and ingredients in a flavorful and perfect balance.

The final touch is a light sauce that accentuates the sweetness of the vegetables used in a modest amount. The chef is dedicated to cooking okonomiyaki that does not rely on strong and overpowering sauces and lets the wonderful and gentle flavors shine through using the perfect amount of soup stock.
