Gaba (written as 我 (ga) meaning I / one’s own / oneself + 馬 (ba) meaning horse ) is a tonkotsu (pork bone broth) ramen restaurant founded in 2000 by a store owner who trained at a famous ramen restaurant in Hakata.
As soon as we opened, a tonkotsu ramen boom spread throughout Hiroshima, and over the last 20 years we have branched out to multiple locations. What makes our broth special is that we simmer pork head overnight to extract all the umami to make a rich and fragrant soup stock.
Pork head has a unique umami, richness, and creaminess without being overly fatty compared to the usual pork bones used in most tonkotsu ramen broth, however, it requires immense skill to handle because it produces an odor and excess soup scum (protein foam that clouds the broth). Our restaurant has perfected a unique method that does not produce any odor and results in a fragrant broth that has a deep flavor and a refreshing aftertaste.
Our handmade thin noodles exquisitely entwine with the broth to complete the perfect ramen exemplifying the true essence of tonkotsu ramen.
