I used to work as an Italian & French dining chef at a hotel, but my love for ramen motivated me to teach myself to make ramen in an unconventional style and open my own restaurant.
Drawing from my experiences of cooking Western cuisine, I made an original spicy salted pork broth that combines 9 kinds of spices, including chili peppers. The renowned ramen critic Hideyuki Ishigami praised the combination of Eastern and Western ingredients in the ramen as “a first in Japan,” describing “it is not only spicy for the sake of spiciness, but it is full of richness and has amazing depth to the flavors.”
