Menya Ichi

Mastered by a former hotel chef, Menya Ichi’s Ramen is filled with an original blend of spices that brings out exquisite flavors.

I used to work as an Italian & French dining chef at a hotel, but my love for ramen motivated me to teach myself to make ramen in an unconventional style and open my own restaurant.
Drawing from my experiences of cooking Western cuisine, I made an original spicy salted pork broth that combines 9 kinds of spices, including chili peppers. The renowned ramen critic Hideyuki Ishigami praised the combination of Eastern and Western ingredients in the ramen as “a first in Japan,” describing “it is not only spicy for the sake of spiciness, but it is full of richness and has amazing depth to the flavors.”
The harmony of mellow and nutritious gelatin-rich broth paired with the gentle mildness of the salted sauce makes this balanced and gourmet ramen satisfying to even the most discerning customers. Stir the noodles thoroughly and enjoy!

We serve pork bone ("tonkotsu") broth soup that is thick and rich in collagen poured into a bowl of soy-based sauce and fragrant oil before adding in thin firm noodles with a chewy texture.
Toppings include thick bean sprouts, green onions, soft and succulent chashu pork, seasoned eggs, and dried seaweed.
Savor the umami of our soy tonkotsu soup, then for additional flavor; enjoy it further by adding a teaspoon fish powder made in-house which is blended with shavings of bonito, mackerel, auxis fish, horse mackerel, and round herring.
